Oatmeal Toffee Cookies

Makes: 20 cookies

Bake time 10 - 12 mins

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1 egg
  • 1 1/4 cup rolled oats
  • 1/2 cup flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup dark chocolate chips
  • 1/4 cup toffee pieces

Directions

  1. Preheat oven to 375F.
  2. in a large bowl, cream together the butter, brown sugar, white sugar, and egg until smooth.  
  3. Mix in the flour, baking soda and salt.  
  4. Stir in the oats, chocolate chips and toffee pieces.  
  5. Spread half of the cookie dough into the bottom tray of a Smart Cookie container.  Place the lid on top to form the cookie pieces.  If the dough is too sticky to remove, place in the fridge for an hour.  
  6. Remove the cookie pieces onto a parchment lined baking sheet.  Bake for 8 - 12 minutes (for chewy cookies bake for 8-10 minutes, for crispy bake for 12 minutes or until browned on top)
