Peanut Butter Cookies
Makes: 24 cookies

Bake time: 8 - 10 minutes
Ingredients
- 1/2 cup unsalted butter
- 3/4 cup crunchy peanut butter
- 1/2 cup white sugar
- 1/2 cup packed brown sugar
- 1 egg
- 1/2 tsp vanilla
- 1 1/2 cup all purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 3/4 teaspoons baking soda
Directions
- Preheat oven to 375F
- Cream together butter, peanut butter, sugars and vanilla.
- Beat in egg.
- In a separate bowl, sift together flour, baking powder, baking soda and salt. Mix dry ingredients into the butter mixture.
- Spread half of the cookie dough into the bottom tray of a Smart Cookie container, place lid on top and refrigerate for a least 1 hour or store in the freezer. Store the remaining dough in another Smart Cookie container.
- After refrigeration is complete, remove cookie portions from Smart Cookie and place on baking sheet lined with parchment paper.
- Bake for for 8 - 10 minutes or until cookies begin to brown. Transfer to a cooling rack.
