Peanut Butter Cookies

Makes: 24 cookies

Prep time: 10 minutes

Bake time: 8 - 10 minutes


  • 1/2 cup unsalted butter
  • 3/4 cup crunchy peanut butter
  • 1/2 cup white sugar
  • 1/2 cup packed brown sugar
  • 1 egg
  • 1/2 tsp vanilla
  • 1 1/2 cup all purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 teaspoons baking soda


  1. Preheat oven to 375F
  2. Cream together butter, peanut butter, sugars and vanilla. 
  3. Beat in egg.
  4. In a separate bowl, sift together flour, baking powder, baking soda and salt.  Mix dry ingredients into the butter mixture.
  5. Spread half of the cookie dough into the bottom tray of a Smart Cookie container, place lid on top and refrigerate for a least 1 hour or store in the freezer.  Store the remaining dough in another Smart Cookie container.
  6. After refrigeration is complete, remove cookie portions from Smart Cookie and place on baking sheet lined with parchment paper.
  7. Bake for for 8 - 10 minutes or until cookies begin to brown.  Transfer to a cooling rack.
