The Blue Lamb Burghini
Lamb meat is an excellent source of high quality protein and also provides a different flavour profile than regular beef burgers. Lamb paired with blue cheese is a classic combination as both ingredients provide a bold, rich flavour. In this recipe you can either choose to stuff the burgers with the blue cheese butter or place it on the top of the burger patty one minute before taking off the grill. Either way you are sure to wow your guests with this tasty burger.
Blue Lamb-burg-hini Burger
Ingredients:
2 pounds ground lamb
2 egg yolks
2 tsp steak spice
1 minced shallot
2 tbsp fresh rosemary, chopped
Directions:
- In a medium bowl gently mix all of the ingredients together.
- Store the mixture in a Burger Master container to shape eight quarter pound patties at once.
- Store in the fridge until ready to use (store in the freezer if not using within 2 days).
Blue Cheese Butter
In a small bowl mix the following ingredients until well combined:
¼ cup blue cheese
½ cup butter
2 tbsp freshly minced parsley
2 tbsp freshly minced basil
2 cloves garlic, minced (optional)
Once well combined, spread into a Smart Cookie container and store in the freezer to use on burgers, steaks, salads, bread and pastas.
We enjoyed these burgers on New Year's Eve topped with portobello mushrooms, lettuce and tomato - what a way to ring in the new year!
